Understanding Your Temperature Readings: Normal vs. a ProblemUpdated a month ago

Your Predictive Thermometer has 8 sensors reading along its length, so it shows you a lot more than a single number. That's a big part of the magic, but it also means a reading can occasionally look "off" when it's actually working perfectly. This article helps you tell the difference between a normal reading that just surprises people and one that points to a real problem.



A quick refresher: what your probe is measuring

Your thermometer tracks several temperatures at once:

  • Core (TrueCore™): the lowest internal temperature of your food. The probe automatically finds the coldest spot along its tip, so a near-miss on placement still gives you an accurate core.
  • Surface (TrueSurface™): the temperature at the surface of your food. This appears once you're in cooking mode (after you set a target temperature).
  • Ambient (TrueAmbient™): the air temperature right around your food, near the top of the probe.

Because these are measuring different things, they will read differently from each other. That's expected, not a malfunction.


Normal readings (even if they surprise you)

Your ambient reads lower than your oven or grill dial.

This is the most common "is something wrong?" question, and the answer is almost always no. Home ovens are often off by 100°F or more, and the air right around your food is genuinely cooler than the rest of the chamber. As your food heats up, moisture evaporates and cools the air near the surface. Your probe is measuring that real, local temperature, which is exactly what helps you cook precisely.

Your ambient reads differently from a grill-mounted gauge.

They're measuring different spots in the cooker, so some difference is completely normal. A gauge mounted at the grate reads the open chamber; the probe reads the air right next to your food.

The core temperature looks high early in the cook.

Give it a little time. The probe continuously looks for the lowest internal temperature as the cook progresses, so an early reading can settle as heat moves through the food.

Different sensors show different numbers.

That's the whole idea. Seeing the spread from the cooler core to the hotter surface is how you know how evenly your food is cooking.

You don't see a surface temperature yet.

Surface temp only appears in cooking mode. Set a target ("predict") temperature in the app or on the Display and it will show up.


Readings that point to a real problem

Some readings are not normal physics. If you see any of the following, it usually means a sensor issue rather than something you did:

  • A sensor stuck at one extreme value that won't move.
  • Readings that swing wildly with no real change in the cook (for example, 178°F and then suddenly 45°F).
  • Two identical probes placed side by side reading very differently in the same spot.
  • An impossible ambient reading, such as hundreds of degrees when the probe is sitting at room temperature and isn't even in food.
  • An overheating alarm that keeps firing after the probe has fully cooled to room temperature.

A quick accuracy check you can do at home

Want to confirm your probe is reading correctly? Try an ice-water bath:

  1. Fill an insulated cup with ice, then add just enough cold water to fill the gaps.
  2. Stir the mixture with your thermometer for about 30 seconds.
  3. All submerged sensors should read close to 32°F (0°C), within a couple tenths of a degree.

If they're way off, that's worth flagging.
