Reading Your Cook: Temperatures, Sensors, and GraphsUpdated 8 days ago
Your Predictive Thermometer has eight sensors along its length, and the app turns those eight numbers into something you can actually cook by. This guide explains what you are looking at, how to see more of it, and what to do when a reading surprises you.
The three temperatures that matter
Rather than making you work out which of eight sensors to trust, the app labels three of them for you. These virtual sensors override the plain T1 to T8 markers.
Core. The lowest internal temperature in your food, and the number that tells you when it is done. One of the lower sensors, usually T1 to T4, will be labelled core. The app works out which one, and it keeps checking as the cook goes on.
Surface. The actual cooking temperature being applied to your food, measured where the food meets the heat. This is the most underrated number in the app. It tells you the rate at which heat is moving into your food. Your internal temperature can never exceed the surface temperature, so if you hold surface steady, you get edge-to-edge evenness. It matters most on long, slow cooks.
Ambient. The temperature of the air right next to your food.
Why ambient reads lower than your oven dial
This is the single most common "something is wrong" report, and almost always nothing is wrong.
Food makes its own weather. As it cooks, water evaporates from the surface and forms an invisible cloud of steam around it, called the boundary layer. Inside that layer, the air is meaningfully cooler than the rest of your oven or grill. On something large, like a roast, the boundary layer can be thick enough to cover the T8 sensor entirely.
The boundary layer is your friend. It steadies the temperature and stops the outside of your food from drying out or overcooking while the middle catches up.
This is also why convection changes things. The fan disturbs the boundary layer, which is exactly why a convection oven cooks faster and gives you a crisper exterior. The trade-off, especially on large food, is that the outside can overcook before the centre is ready. For chips, it is ideal.
So when your ambient reading sits below the number on your oven dial, your thermometer is telling you the truth about the air around your food. Your oven dial is telling you about the oven.
Seeing the graph
The graph shows only while a thermometer is on and connected to the app.
- If you cannot see it, tap any temperature. It appears.
- To hide it, tap the three-dot menu and choose "hide graph."
- To show or hide any individual sensor line, tap the colour-coded circle underneath that temperature.
You can pinch to zoom on the graph to look closely at part of a cook.
Advanced mode: all eight sensors
Standard view gives you core, surface, and ambient. Advanced mode gives you everything.
- Find advanced mode in the settings menu, behind the three-dot icon. You can also switch by double-tapping a probe's temperature row.
- Sensors run from T1, closest to the tip, to T8, the sensor in the handle under the screw. T8 is the one usually reported as ambient.
- Toggle any sensor on or off by tapping the colour-coded circle beneath it.
Watching all eight at once is worth doing at least once. Seeing heat move through a piece of food, sensor by sensor, changes how you think about cooking it.
Note that advanced mode is heavier to run. If a Live Activity keeps dropping on an older iPhone, switching that device back to standard view usually settles it.
Starting a fresh graph
If your graph is cluttered from previous cooks, you can reset the session from the app without touching the thermometer.
- Tap the three-dot menu across the thermometer you want to reset.
- Select Power Mode.
- Choose Reset Combustion Session at the bottom.
- Tap OK.
This clears the current graph data and starts a new session. Your settings are kept, and the connection between app and thermometer stays up.
Reset is a good idea when you are starting a new cook, when accumulated data has made the graph hard to read, or when something small is behaving oddly. Do not reset if you still need the cook data you have, if you are in the middle of a cook, or if you are dealing with a connection problem, since resetting will not fix that.
Export your data first if you want to keep it.
Debug mode
Debug mode lives in the same three-dot settings menu. There is a lot in there, and most of it is not meant for everyday use, but it is genuinely useful when you are chasing a connection problem.
The number worth knowing is signal strength, shown in dBm as a negative figure. Closer to zero is better:

If you are troubleshooting range, debug mode tells you whether moving a Booster actually helped.
If you are an engineer, you will probably enjoy the rest of it.
When a reading is genuinely wrong
Most surprising readings are physics rather than faults. A reading is more likely to be a real problem if a sensor is stuck at one extreme value and will not move, if numbers swing wildly with no matching change in the cook, or if two identical probes sitting side by side disagree substantially.
You can check accuracy at home. Fill an insulated cup with ice, add just enough cold water to fill the gaps, and stir with the thermometer for about thirty seconds. Every submerged sensor should read close to 32°F (0°C).
