Being able to track the state of charge is actually quite a tricky thing to do, requiring special circuitry (generally referred to as a fuel guard) that carefully keeps track of the state of charge. It’s a tricky enough thing to do that there are specialized chips you can buy that do this job for many different kinds of batteries (https://www.ti.com/power-management/battery-management/fuel-gauges/overview.html)
However, such a chip does not exist for the somewhat unusual chemistry used in wireless thermometers that can withstand high temperatures. Developing this capability is a pretty significant effort, hence the best we can do is trigger a low battery alert when the voltage drops to a critical level.
