Internal temperature works for baking the same way it works for meat, and it beats a skewer test or tapping a loaf.
How to use it in a bake
- Find the target first. Use the table below, or your recipe if it gives one
- Let batters set before inserting. Give a delicate cake a few minutes in the oven first, so the probe is not sitting in liquid
- Aim for the centre, though a cake is far more forgiving about placement than poultry
- Keep away from the edges, which run hotter than the middle and will read high
- Use the Pot Clip to hold the probe upright in a bake or a pot
- At 45 degrees for delicate things. Cheesecakes and custards read better on an angle
Give it a proper wash between a roast and a cake.
